Properties and Maintenance Committee Chair
Roncesvalles Village BIA
Owner, Cinco Mexican Restaurant
Gerard Linares has been in the restaurant business for over 15 years. He started in the industry at the age of 17, but, his passion for cooking started much younger. By 10 years old he would prepare meals for his cousins all on his own.
At Humber College, he changed his study to International Business, but always maintained employment in the restaurant industry working with companies such as Sircorp and Cara. After graduating from business, he ultimately returned to the industry, working in kitchen management at Milestones, and in hospitality. Then he sidestepped into managing small residential projects, then into construction and renovations, eventually, staring his own small business in renovations.
Although he had studied business management and ran his own small business in renovation, his long-time passion for food brought him back to the restaurant business. He moved to Gold Coast Queensland in Australia, where he ended up supervising a restaurant kitchen, then to a high-end restaurant that became known for its aesthetic beauty and for the great menu he and the chefs had created.
Gerard was lured back to Canada with the offer of running a traditional Mexican restaurant with a modern twist. First, he immersed himself in traditional Mexican cuisine where he learned advanced techniques and recipes in Mexico before returning to Canada to open Cinco restaurant in Roncesvalles Village. Gerard is very determined to help this community thrive and do his part to show how grateful he is to be a part of it.
